Recipe for Whole wheat Pear Muffins

Every week we will be sharing a recipe using the foods from The Very Hungry Caterpillar™ book as ingredients!

"On Tuesday he ate through two pears." So this week's recipe of the week is Whole wheat Pear Muffins - read more to learn how to make them yourself!

You will need (to make 12 mini muffins):

  • 1 large or 2 small pears
  • 250g plain yoghurt
  • 200g light brown sugar
  • 110g white whole wheat flour
  • 1 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon 
  • Pinch of salt

 

1. Preheat the oven to 180 degrees celsius.

2. Grease your muffin tin with nonstick cooking spray or butter.

3. In a large mixing bowl, whisk together the eggs, yoghurt and 180g of the brown sugar until smooth.

4. In another bowl, sift together the flour, baking powder, baking soda and salt.

5. Add the dry ingredients into the bowl with the egg mixture and gently mix together.

6. Add the vanilla and diced pears and mix again.

7. Spoon the batter into the prepared muffin tin, dividing it evenly.

8. In a small bowl, mix together the remaining 2 Tbsp brown sugar and the cinnamon and then sprinkle the mixture onto each muffin.

9. Bake the muffins about 20 minutes, or until cooked through (you can test this by prodding with a knife; if it comes out with any batter on it then the muffins aren’t cooked).

10. Cool the muffins in the pan for 5 minutes, then remove them from the pan and allow them to continue to cool on a rack.

These yummy pear muffins will take around fifteen minutes to prepare, and another twenty minutes in the oven.
